Hotel Introduces New Menu, Rooftop Garden and Smoker

Hyatt Regency St. Louis at The Arch invites guests to feast this fall with several new culinary offerings. From a new menu at RED Kitchen & Bar featuring a variety of fresh dishes from the hotel’s new rooftop garden to delicious barbeque fare cooked up by the hotel’s new smoker and a new beer program for beer lovers, Hyatt Regency St. Louis has a lot to offer the taste buds. “We’ve introduced an exciting set of culinary experiences and offerings for our hotel guests, as well as St. Louis residents, to indulge in,” said Director of Operations Tyson Warren. “With new flavorful dishes, fresh local ingredients and innovative programs, locals and travelers alike will get a true taste of St. Louis at Hyatt Regency St. Louis at The Arch.”

Hyatt Regency St. Louis at The Arch debuted their outdoor garden this summer on the 7th floor rooftop. The garden, which has an irrigation system installed to water the plants twice a day and is carefully attended to by the food & beverage team, features fresh homegrown herbs and vegetables such as zucchini, yellow squash, cherry tomatoes, Big Boy tomatoes, Anaheim peppers, green bell peppers, thyme, cilantro, sage, basil, flat leaf parsley and oregano. With a focus on farm to table in the hotel’s RED Kitchen & Bar, many of these herbs and vegetables are used in the restaurant’s new menu, in line with Hyatt’s corporate culinary philosophy of “Food. Thoughtfully Sourced. Carefully Served.” A few culinary highlights using ingredients from the garden include the Salmon Greek Salad with oregano, Crab Cake with Charred Corn and Poblano Relish with cilantro, Beef Short Rib Flatbread with tomatoes and the Italian Panini with fresh basil. With the hotel roof visible from many of the guestroom windows, guests have a front and center view of the garden and Chef Michael Barber when he goes up to pick his produce for the day.

Apart from the garden-to-table dishes on RED Kitchen & Bar’s menu, the restaurant has debuted an entirely new menu of innovative cuisine for fall focusing on fresh and flavorful fare with an emphasis on seasonality. Menu highlights include the Mama Toscano Toasted Ravioli with marinara sauce; Chicken Sausage Flatbread with cremini mushrooms and arugula; Pan Seared Missouri Rainbow Trout with cremini mushroom ravioli and wilted baby spinach; Brined Pork Tenderloin with port wine reduction, mashed potatoes and baby kale; and Smoked Tofu with sweet corn, fava bean ragout and chive oil. The fresh and sustainable ingredients used in these dishes come from local farms throughout Missouri and Illinois, providing a true farm-to-table dining experience. Some of the hotel’s local vendors include Rain Crow Ranch in Doniphan, MO; Ludwig Farmstead
in Fithian, IL; Deppe Farm in Washington, MO; Lee Farm in Truxton, MO; Thies Farm in St. Louis, MO; and Echo Valley Orchards in Carbondale, IL.

RED also features Hyatt’s groundbreaking “For Kids By Kids” children’s menu with a selection of healthy, satisfying and interactive entrees carefully tested by kids for kids. The new menu offers a creative way for kids to engage with their food, such as customizing their own pasta dish, topping their own taco and “shaking” their own salad. There are also a few gluten-free options including gluten-free chicken tenders and gluten-free cinnamon blueberry pancakes.

Another item spicing up the menus at both RED Kitchen & Bar and Brewhouse Historical Sports Bar is the hotel’s new smoker. The tasty smoked culinary items include the Hickory Smoked Chicken Wings at RED and the Saint Louis Style Ribs, Barbeque Pulled Pork Sandwich on a brioche bun and Smoked Beef Brisket Sandwich with braised onions on a hoagie at Brewhouse.

In addition to the popular smoked items, Brewhouse Historical Sports Bar is a beer lover’s paradise featuring an extensive selection of local beers, a tasty food menu incorporating the flavors of beer and a recently debuted Beer Passport Program. The Brewmaster Membership consists of a passport sized booklet featuring every beer on the Brewhouse menu with space to write down tasting notes and an area for the bartender or manager to stamp, showing the customer has successfully tried that beer. As the customer works their way through the list, a variety of different incentives will be offered including discounts on food, complimentary dessert, free beer flight and more, with the ultimate goal being to complete the entire list and earn a personal customized beer mug and the honor of becoming a Brewmaster. Brewmasters consistently receive a 20 oz. pour in their mug for the price of a standard pint. The program is free to join and other membership perks include shot specials on game days and exclusive Facebook deals.
