RED also offers a daily breakfast buffet with made-to-order hot and cold items as well as an ala-carte menu.

Executive Chef Michael Barber

Michael Barber began his culinary career at the age of 12 at Restaurant X, now known as Bully Boy Chop House in Congers, NY as a Utility Steward where he worked various positions until he enrolled at the Culinary Institute of America.

Serving as the Executive Chef of Hyatt Regency St. Louis at The Arch since 2008, this 15 year Hyatt veteran has held culinary positions in Orlando, Washington DC, Atlanta and Dallas.

Chef Michael's passion and commitment to Hyatt's philosophy of Food.Thoughtfully Sourced. Carefully Served. is evident in the Red Kitchen & Bar menu. Chef created a rooftop garden to grow herbs and vegetables that will be incorporated into seasonal dishes on the RED menu.
